Ethiopia, rumoured to be the birthplace of coffee, still grows some of the world’s finest coffee. The region of Guji is no exception! This coffee comes to us via Sibu coffee, a family-owned business who work with local small scale growers to process their coffee together. This coffee is naturally processed, meaning that it is dried on raised beds in the sun right after picking, this allows the coffee to develop a robust body and flavour that can be wild and complex. The long fermentation during drying allows the sweet flavours of the cherry to be absorbed by the beans giving the coffee its intense fruity notes and aromas.
